Steps
Mix together the turkey mince with the parsley, garlic, oregano and season and form small even size balls using damp hands
Place in fridge until ready to use
Fill a large saucepan with water and bring to the boil, add the pasta and cook according to instructions
Heat a large deep-sided frying pan or wok and add the olive oil
Gently pan fry the onions, garlic, celery and carrots until just soft
Add the can of tomatoes and also the cherry tomatoes and bring to the boil until liquid has reduced to nearly half
Bring the sauce to a gentle simmer and add the turkey meatballs and warm through
Serve on a bed of pasta and a serving of grated parmesan on top
TIP - if the sauce is too thick, add a tablespoon of hot water to loosen the sauce
