Steps
Preheat oven to 200C/180C fan
Steam the sweet potato, spray with olive oil and sprinkle with salt and place in the oven and bake for 30 minutes until golden
Heat the oil in a flat bottomed baking dish on stove top and cook salmon top side up for 2 minutes
Put salmon to one side and add garlic and capsicum to the baking dish and return to the oven and cook for 5 mins
Remove the baking dish from the oven and place on stove top
Add arrabbiata sauce and bring to the boil with 2 cups of water
Stir in chopped spinach and place salmon top side up and sprinkle with oregano, season accordingly
Scatter tomatoes around the salmon and return to the oven and bake uncovered for 10 minutes until salmon is cooked through
Scatter with basil leaves
Serve with steamed broccoli or other green vegetables
