Steps
Cook rice according to instructions
Spray a large heavy based frying pan or wok and heat on stove top
Add the onion, capsicum, garlic and chilli and cook for a couple of minutes on a gentle heat
Dissolve the stock cube in hot water
Add the tomato paste, bay leaf and thyme and mix together
Add the dissolved stock and cherry tomatoes and put on the lid and cook for 10 minutes on a low heat
Stir occasionally and then add the prawns and cook for 3 - 4 minutes until cooked
Add the cooked rice and mix throughly
Serve with chopped parsley on top
