Spicy prawn and halloumi rice

Steps
Boil water in a saucepan with a steamer pan on top
Add the cauliflower and steam for 5 mins until just cooked and add the spinach for a further minute until wilted and put to one side
Spray the oil in a large frying pan and cook the onions and capsicum until cooked
Add the turmeric, curry and chilli flakes and toss through the vegetables and add the halloumi and gently stir
Cook the rice according to instructions
In another frying pan, heat the oil with the garlic and ginger and cook the prawns over a gentle heat
Add the rice, caulflower and spinach to the frying pan and cook over a low heat for a few minutes until warmed through
Season with the salt and pepper
Add the cooked prawns and garlic to the rice dish and mix together
When serving, scatter the chopped chilli and the coriander or parsley over the top of the dish with the lemon
NB If the rice is looking dry, add a tablespoon of water and gently cook for another minute
Use the chilli flakes sparingly according to taste
If using frozen prawns ensure that they are fully de-frosted before cooking
