Simple Stir-fry Rice and Chicken

Steps
Spray a large heavy based saucepan with the olive oil and put on stove top on a medium heat
Steam the rice according to instructions
Add the onion and capsicum and cook for a couple of minutes, stirring occasionally until softened
Add the frozen vegetables and then add the cooked rice
Stir in the soy sauce and once everything is warmed through take off the heat
Shred the chicken and lay on the rice mixture
NB - chicken in this recipe is already cooked and bought ready to eat
NB - chicken can be substituted with fish or vegetables or torfu
