Saag with Chickpeas

Saag with chickpeas is a delicious and nutritious dish that combines the flavours of saag (a leafy green curry) with the heartiness of chickpeas. Saag is a traditional North Indian dish made with leafy greens such as spinach, mustard greens, or fenugreek leaves, we use spinach in this recipe. It is a great option for vegetarians or anyone looking for a nutritious and flavorful meal.

Steps
Heat olive oil in a large saucepan, add the spices for 30 secs
Add onion, garlic and ginger and cook until just soft
Add the tomatoes and cook for 4 - 5 minutes until soft
Add the water and chickpeas
Season with salt and add the chopped spinach and put lid on and cook until spinach has wilted
Squeeze the lemon juice and serve with cooked rice
