Roast Vegetable Pizza

Steps
Preheat oven to 240C/220C fan
Heat a pizza stone or heavy based oven tray in oven
Spread the tomato sauce over the pizza base
Place the vegetables neatly on top of the base
Sprinkle the cheese evenly over the vegetables
Spray a small amount of the olive oil over the pizza and place in hot oven for 12 - 15 mins
Before serving sprinkle the shallots over the top
Season to taste

1 | Capsicum red cut into large chunks |
1 | Zucchini thickly sliced |
1/2 | Small eggplant thickly sliced |
1 | Red Onion thickly sliced |
1 | Shallot thinly sliced |
2 Tbs | Light chedder cheese shredded |
1 | Olive oil spray |
