Who said you its not possible to eat Pizza and lose weight? This fantastic recipe uses a tasty blend of roasted vegetables that give you a hearty meal. You can have a whole pizza each or try some of our other pizzas and have slices of each - a perfect and healthy Friday night treat.

Steps

Preheat oven to 240C/220C fan

Heat a pizza stone or heavy based oven tray in oven

Spread the tomato sauce over the pizza base

Place the vegetables neatly on top of the base

Sprinkle the cheese evenly over the vegetables

Spray a small amount of the olive oil over the pizza and place in hot oven for 12 - 15 mins

Before serving sprinkle the shallots over the top

Season to taste
