Steps

Steam apple cubes until slightly soft and put aside

Mix together onion, garlic and parsley with the pork

Add salt and pepper

In a small bowl lightly whisk the eggs and add 1/2 to the pork mix

Add 2 tbs of panko breadcrumbs and mix together well

Put the rest of the panko breadcrumbs in a shallow tray or plate

Divide the pork mixture into 8 and roll each piece into a ball

Dip each into the egg mixture then roll into the breadcrumbs

Place onto a tray and cover and put in the fridge for an hour or so to firm up

Heat a shallow frying pan and put half of the oil in and gently place 4 burgers into the pan pushing them into a burger shape

Cook on each side for 5 mins until cooked through and repeat with the remaining burgers

Serve with the roll spread with the tzatziki and the beetroot salad alongside

NB - The onions, garlic and parsley can be chopped together in a food processor
