Miso Pork Udon Noodles

Our Miso Pork with Udon Noodles combines tender slices of pork with a rich broth flavoured with miso paste, maple syrup, and mirin, creating a delicious balance of umami and sweetness.
Fresh vegetables like bok choy, button mushrooms, and edamame add crunch and freshness, complemented by the hearty, chewy texture of udon noodles.

Steps
In a large frying pan or wok, lightly spray with olive oil on a medium heat
Bring water to the boil in a large saucepan and cook the noodles according to instructions
Slice the pork fillet and add to the pan, turning over once for 2 - 3 mins in total and put to one side
Add the olive oil, garlic, ginger and the mushrooms and cook for 2 - 3 mins
Stir in the miso paste, maple syrup and mirin and add the bok choy and edamame beans
Stir through the contents and put the lid on the pan, gently steaming the vegetables for a further minute and return the pork to the pan to warm through and cooked to personal preference
Serve the noodles with the pork and vegetables together, garnished with sesame seeds and spring onions
NB * Add half the stock and stir though with the pork and vegetables until the consistency is to personal taste
If a more broth-like meal is required, add the remaining stock - being careful not to overcook the pork
