Healthy Sweet and Sour Chicken

Steps
Spray a large heavy based saucepan with the olive oil and put on stove top on a medium heat
Lightly brown the onion and chicken together in the pan
Add the pineapple and juice, vinegar, soy sauce, sugar and stock and bring to the boil
Add the vegetables and cover with the lid, reduce to simmer for 30 -45 minutes until chicken is cooked through
If there is still liquid in the pan, remove the chicken and vegetables and boil the liquid until reduced
Serve with rice and chopped coriander on top

400g | Pineapple pieces in natural juice undrained |
2 tbs | Vinegar |

1 tbs | Brown sugar |
1 | Spray olive oil |
200g | Rice |
1 | Coriander chopped |
