Corn and Zucchini Fritter Burgers

Corn and zucchini fritter burgers are a fresh tasting nutritious dish that combines the sweetness of corn with the subtle, earthy flavours of zucchini, all in a satisfying burger form.

Steps
Mix all the fritter ingredients in a large bowl and stir in the whisked egg thoroughly
Heat a large non-stick frying pan and add some of the oil
Using a large spoon gently spoon the batter into the pan
Cook each side of the fritters for 2-3 minutes until golden brown
Cook in two batches using the remaining oil, keeping the first batch warm
There should be 8 fritters in total
Half each bread roll and sandwich the fritter with the advocado and some salad
