Chicken Cacciatore

Steps
Preheat oven to 180C/160C fan
Heat an ovenproof caserole pan together with the oil and brown the chicken thighs lightly for 10 mins turning over halfway and afterwards put to oneside
Place the pan back onto the heat, spray with oil and add bacon, onion, garlic and capsicum, stirring occasionally for 5 mins
Add the wine and increase the heat to a boil and add the tomatoes, olives, mushrooms, potatoes and herbs
Cover the pan tightly either wth a double layer of foil or the lid and place in the oven for 1 - 1 1/2 hrs until the potato is tender
Serve with bread
