Beef Bourguignon

A classic recipe the healthy way. Beef bourguignon is a staple in the French kitchen, but our version gives you the same hearty goodness without giving up on your health. This nutritious recipe includes plenty of flavour with red wine, carrots, mushrooms, broccolini and some extra veggies. With 59g of protein per serve and low in fat, it's just the thing to keep you on track.

Steps
Preheat oven to 200C/190C fan
Lightly spray the olive oil in a heavy oven proof casserole dish and on a light heat add the onion, garlic and bacon for 5 mins
Add the seasoned cubed meat and turn after 5 mins to lightly brown all over
Add the carrots, and bouquet garni followed by the wine and stock and bring to the boil
Turn the heat down until a gently simmer and add the mushrooms
Cover with lid and simmer gently for 45 mins adding cornflour if sauce requires thickening
Whilst the beef is simmering, microwave the potatoes for 10 mins and put into oven for the final half an hour
Steam the broccolini and serve together with the beef and baked potatoes

250ml | Beef liquid stock |
1 | Spray olive oil |
2 tsp | Cornflour |
2 | Broccolini bunches |
4 | Medium potatoes approx 150 g each |
