Asian style bolognese

Steps
Soak the shitake mushrooms for 30 mins until soft and remove keeping the mushroom water
Slice the mushrooms thickly and put to one side
Heat the peanut oil in a large frying pan and gently cook the garlic, ginger and chilli for 2 mins
Add the minced pork and half of the shallots and cook until just cooked for 5 - 6 mins
Add the shitake mushrooms and stir together
Stir through the miso, soy sauce and the sesame oil
Add the edamame beans with 100ml of mushroom water and gently heat through with the meat mixture
In the meantime, boil a large saucepan of water and cook the noodles according to instructions
When the noodles are cooked, drain and gently stir through the bolognese mixture
Divide between 4 large bowls and sprinkle with the sesame seeds
Scatter the remaining shallots and coriander over the top of the dish and serve
NB Pork can be substituted with chicken reducing the calorie intake per person by 50 calories
